Sweet Potato Milk (Paleo, Whole30, AIP)

As a coconut-free, nut-free, dairy-free AIP milk alternative, sweet potato milk is an easy-to-make, creamy, and tasty beverage that works well for many things.

INGREDIENTS
1 Sweet Potato (use a bigger potato for thicker, creamier milk and a smaller one for less creamy milk)
4 cups Water (plus more after cooking if needed to make 4 cups)
1 tsp Maple Syrup (optional, omit for Whole30)
INSTRUCTIONS
Peel and chop the potato into 1-inch cubes. Add to a pot and add 4 cups of water.
Bring the pot to a boil over medium high heat and boil for approx 15 minutes, or until the potatoes are soft and easily pierced with a fork.
Using a slotted spoon, transfer the potatoes to a blender, reserving the cooking water.
Pour the cooking water into a measuring cup. You'll need 4 cups so if some of the water was absorbed into the potatoes or evaporated during the cooking process, add fresh water to make 4 cups. Add this water to the blender as well.
This step is optional (and don't do it if you're on Whole30), but you can also add 1 tsp of maple syrup at this time.
Blend the mixture on high for 1-3 minutes, or until completely blended and creamy. Store in the fridge for up to 5 days or the freezer for up to 3 months.
Banana Milk (Paleo, Whole30, AIP)

If you need an AIP coconut milk substitute, this alternative works well in many situations. This banana milk takes a minute to make and tastes great! (Also Paleo and Whole30)

INGREDIENTS
1 Banana
1 to 2 cups Water
1 Date or 1 tsp Maple Syrup (to sweeten (omit for Whole30))
1 pinch Cinnamon (optional)
INSTRUCTIONS
Simply blend the banana with the desired amount of water and any desired flavor elements. 1 cup of water will make a creamy, very banana-tasting drink, 2 cups will be a little less creamy and banana-y.
TIGERNUT MILK
Tigernut Milk (Paleo, Whole30, AIP, nut-free)

Servings: 2 cups
Making your own tigernut milk is actually extremely easy to do. You get a creamy, slightly sweet, delicious beverage that can be used in place of coconut milk and is Paleo, Whole30, AIP, nut-free, and seed-free.
Note: This makes 2-3 cups, depending on how much water you use.

INGREDIENTS
1 cup Whole Tigernuts
4 cups Water (divided)
pinch Sea Salt
INSTRUCTIONS
24-48 hours ahead of time, place the tigernuts into a jar or bowl and cover with water (approx 2 cups). Store covered in the fridge for 24-48 hours.
When ready to make the milk, strain the water out, rinse, and then add the tigernuts, a fresh 2 cups of water, and the pinch of sea salt to a blender. Blend on high for 3-4 minutes, or until there are no chunks remaining.
Strain the mixture through a nut milk bag, cheesecloth, or a fine mesh sieve. Squeeze or knead as needed to get all of the liquid out. Store in a glass jar in the fridge for up to a week.
NOTES
MEAL PREP: This is a good item for meal prep as you can make it and store it in the fridge for a week. Note that you’ll need to soak the tigernuts for 24-48 hours prior to making the milk.
FREEZER: You can freeze the tigernut milk and thaw in the fridge.
COCONUT MILK
INGREDIENTS
2 cups Shredded, Unsweetened Coconut
4 cups Water
INSTRUCTIONS
Put the coconut and water into a blender. Blend on high for about 3 minutes, or until no chunks remain.
Pour the mixture through a nut milk bag, cheesecloth, or fine mesh sieve. Squeeze and knead to get all of the milk out.
Pour into a glass storage container and refrigerate until needed. Keep in the fridge for up to a week, shaking to mix any separation that may occur.
NOTES
Equipment needed: Blender and Nut milk bag/cheesecloth/or fine mesh sieve for straining the milk
AVACADO MILK
Avocado Milk:
2 Cups Filtered Water
1/2 Cup Diced Avocado (ensure it’s not over ripe and does not have any dark spots)
Pinch of Sea Salt
Optional Sweetener: 1/2 to 1 tsp Honey or Maple Syrup to Taste or 1 unsulphured pitted date to sweeten
Optional Flavor: 1/2 tsp Organic Vanilla Extract (not flavor)
Combine water, avocado and a pinch of salt together in a blender or use an immersion blender. If you want a slightly sweet taste, add the sweetener of choice from above, blend and test the flavor, adjust if necessary.
Serve chilled.
Note: Best consumed or used right away in a recipe
