This recipe makes a great breakfast, afternoon or dessert snack. Low glycemic, gluten- free, healthy and delicious!
For the oats
1 cup of oats

1.5 tsp vanilla

1 tbsp maple syrup

For the jam:
2.5 cups rasberries
1 squeeze lemon juice
2 tbsp maple syrup

2- 3 tbsp chia seeds

Yogurt cheesecake:
1 cup greek yogurt
2 tsp maple syrup

-Stir all oat ingredients together, let sit overnight.
-Heat rasberries over low heat w/ lemon juice & maple syrup. Mash with fork. Remove from heat. Stir in chia and let it thicken.
-Mix yogurt ingredients together.
-Layer all parts, about 1 inch thick for each layer
-Top with coconut flakes
