Sweet potato casserole

For the potatoes
4 Sweet Potatoes
1 tsp ground Cinnamon
1/4 tsp Mace (or Nutmeg if not on AIP)
1 tsp Sea Salt
2 tbsp Honey (or Maple syrup)
For the topping
3/4 cup sliced Tigernuts
1/2 cup Banana Chips
1/4 cup Coconut Sugar (Or Maple Sugar; you can use less if desired)
1/4 cup Avocado oil (Or coconut oil, or Olive Oil)
INSTRUCTIONS
Preheat the oven to 425 F. Poke several holes in the sweet potatoes with a fork or knife and then place in the oven for 1 hour. Once done, let cool until you’re able to handle them, remove the skins and put the flesh of the sweet potatoes into a bowl.
Add the other ingredients for the potatoes and then use a hand mixer or potato masher to mix them until smooth. Scoop into a baking dish.
Mix the toppings ingredients in a small bowl, then sprinkle over the top of the sweet potato mash. (If making ahead of time,stop at this point and put in the fridge until close to serving.)
Bake for an additional 20 minutes.
NOTES
This is a great recipe to make ahead of time and then just reheat for dinner. You can even make homemade AIP marshmallows to go on top as well – super yum!

Filling
4 medium sweet potatoes peeled if desired and boiled (about 4 cups mashed)
1/2 cup full fat coconut milk without guar gum (for AIP)
3/4 cup coconut sugar adjust to desired sweetness
1/2 tsp vanilla extract
1/4 tsp pink sea salt
Crumb Topping
1/2 cup coconut sugar
1/2 cup coconut flour
1/2 cup coconut oil (room temp, not melted)
1 tsp ground cinnamon
Instructions
Preheat oven to 350 degrees Fahrenheit and grease an 8x8" glass baking dish.
Mash the sweet potatoes. In a large bowl, mix in the coconut milk, coconut sugar, vanilla, and sea salt with the sweet potatoes until well incorporated.
Spoon the sweet potato filling into the glass dish and distribute it evenly.
Make the crumb topping by combining the topping ingredients in a small bowl. Be careful not to stir them too vigorously or all the crumbles will break- leave some intact.
Pour the crumb topping on top of the filling and distribute it evenly.
Bake at 350 degrees for about 40 minutes. Allow to cool slightly, then serve.
